Ingredients for 4 servings:

  • 1kg assorted tripe
  • 1 onion, 1 carrot, celery 3
  • 3 bay leaves, some mint leaves
  • 4 tablespoons Extra-virgin olive oil
  • Tomato sauce
  • Salt, pepper, grated cheese
  • 1 glass of dry white wine

Boil tripe, cut into strips, in salted water for one hour, and meanwhile prepared the lightly with oil, onion, carrot, chopped celery and bay leaves whole. After a while, throw in the tripe well drained with a few leaves of fresh mint. Allow to flavor mixing, pour the wine, it evaporates, then add a little tomato sauce, diluted and adjusted with salt and pepper.
