Ingredients for 4 servings:
- 1kg assorted tripe li>
- 1 onion, 1 carrot, celery 3 li>
- 3 bay leaves, some mint leaves li>
- 4 tablespoons Extra-virgin olive oil li>
- Tomato sauce li>
- Salt, pepper, grated cheese li>
- 1 glass of dry white wine li>
Boil tripe, cut into strips, in salted water for one hour, and meanwhile prepared the lightly with oil, onion, carrot, chopped celery and bay leaves whole. After a while, throw in the tripe well drained with a few leaves of fresh mint.
